Paula Aquino Sanchez was born in Logoche, Oaxaca (116 km from Oaxaca City). Her earliest memories are watching his father producing mezcal at their family Palenque (distillery) before his death when she was 6 years old, so it was her grandfathered and uncles who taught her each step of the process of mezcal production. Her mother also comes from a family of Mezcaleros. Paula is a fourth generation of two founding mezcal producing families, and wife of Hermogenes Vasquez, a famous mezcal producer from San Luis Amatlan, Oaxaca.
When Paula turned 19 and Hermogenes 21; they got married and formed a family. Their son Jorge is now working and producing mezcal with them at their family's distillery.
This expression of Maguey Cuishe (Agave karwinskii) from Paula was made using tahona for crushing the cooked agaves, after being roasted in a conical earthen oven for about 5 days, fermented with only natural yeast, and two distillation in copper pot still.
Aromas of this production: Floral, mixed fruits and pastries on the nose.
Flavours of this production: High notes of berries, lime, mixed with floral and juice flavours of dried herbs and a slightly salty finish.
