CUISH | Fieles Difuntos 2023 | Monterrosa Family | 200ml
This limited edition bottle from CUISH was crafted by the Monterrosa family to honor the Mexican holiday of Day of the Dead - Día de los Muertos. As a product rooted in tradition, it was inspired by Antonia Mendez and Emilia Monterrosa's experience collecting Day of the Dead offerings in 1991. While noticing the abundance of ripe fruit on an altar, they were inspired to rescue it and incorporate it into their mezcal production. This happy accident resulted in the creation of a "Pechuga" mezcal, without the use of chicken breast (pechuga). This is the origin story behind the Fíeles Difuntos edition, passed down by Antonia's son Felix Monterrosa, who later decided to revive the recipe after 20 years.
The orange cempasuchil or marigold flower is a prominent element on the altar, imparting its distinctive flavor to this mezcal. Due to the highly seasonal nature of the flowers and fruits, we are able to enjoy the previous year's production for the Day of the Dead celebration in Europe, as there is not enough time to bring in the current year's production. As a result, this edition was distilled and bottled in 2023, in preparation for the Day of the Dead festivities in Oaxaca, and has been aging in bottles since then.
This elixir is the culmination of a careful distillation process, infusing ingredients with the essence of dearly departed spirits and honoring generations of tradition. After maturing for 7 to 8 years, it is distilled with mandarin, limes, tejocote, apples, loquats, chocolate, mole with turkey breast, pumpkin and chilacayota sweets, jicamas, and marigold flowers, which are only available during this season. With a notable citrus and floral scent, the palate is dominated by fruity, citrus, and herbal flavors.

- Roasted in truncated conical earthen oven
- Tahona crushed
- Fermented in open sabino wood vats with natural yeast using well water
- Triple-distilled in Filipino style copper pot still
- The third distillation is done using all of the ingredients and main dishes that the family prepare as "offerings" for the altar at the Day of Dead celebration.
