Paula Aquino Sanchez, born in Logoche, Oaxaca (116 km from Oaxaca City), grew up watching her father produce mezcal at their family Palenque (distillery) before his passing when she was just 6 years old. Her grandfather and uncles became her teachers, passing down the knowledge of each step involved in the process of mezcal production. Paula's family is deeply rooted in the industry, with her mother also coming from a family of Mezcaleros. As a fourth generation mezcal producer, Paula is well-versed in the craft, and is also the wife of Hermogenes Vasquez, a renowned mezcal producer from San Luis Amatlan, Oaxaca. When Paula and Hermogenes turned 19 and 21, respectively, they were married and began working together as a family. Now, their son Jorge has joined them at their family's distillery to continue the tradition.
This particular maguey matured in Paula's land for 8-10 years, with broad leaves and a penchant for sloping terrain with both shadow and sunlight. Known in scientific circles as the "drinkers' maguey" and called the "shadow maguey" by locals, the mezcal made from Tobalá maguey is an endemic species of Oaxaca and it is a beloved treat by locals, with its delightful and approachable taste.
