Mezcalosfera | Alto w Pulque | 500ml

This mezcal was crafted by Luis Pérez, a master distiller with over three decades of experience, from Río de Parras, Michoacán, México. The Agave Inaquidiens, known as "Alto" and taking 12 to 18 years to mature, was used in its production. Luis comes from a family of mezcal producers, learning the trade from his father and continuing the tradition with his brothers, uncles, and cousins. Luis considers this mezcal, which is fermented with Pulque and also made from Agave alto, to be his personal favorite. To activate the fermentation, he adds 20 liters of pulque to the mix.

What is Pulque?

Pulque is an alcoholic beverage made from the fermented sap of the maguey plant and it has been produced for millennia. It has the color of milk, a rather viscous consistency and a sour yeast-like taste.

  • 100% Alto (Agave inaquidiens / 12 to 18 years)
  • Rio de Parras, Michoacán, México 
  • 1680 meters above sea level
  • Roasted in a truncated conical earthen oven 
  • Hand crushed 
  • Fermented in open-air vats with natural yeast using well water 
  • Double-distilled in Filipino style copper pot still 
  • 20 liters of Pulque added to the fermentation vat
  • 52,2% ABV
  • 500 liters produced in May 2024
