Mezcalosfera | Mexicano | 500ml | 2020

This is a batch was made in March 2020 by Maestro Mezcalero Don Juan García. He was taught the craft by his father is continuing the family tradition by passing down knowledge to his son.. He enjoys drinking Tobalá but prefers working with only wild agaves like this Mexicano where he uses only one distillation with refrescadera, a method that is known in this area of Oaxaca. He gets his agaves from his land, and sometimes buys agaves from people he knows and trusts. This batch has the same process and yet, a different feeling in the mouth and some new notes of flavors and aromas. A good example of how the same maguey, made the same way, by the the same master distiller can taste different.

Flavours of this production: Butter, oil, bread, minerals 

PRODUCTION NOTES:

  • Made by Maestro Juan García
  • Mexicano (Agave rhodacantha)
  • Age of the agave before harvest - 20 to 27 years
  • Miahuatlán, Oaxaca, Mexico - located 1650 meters above sea level
  • Roasted in truncated conical earthen oven 
  • Tahona crushed
  • Fermented in open-air sabino barrels with natural yeast using well water 
  • One distillation in Filipino style copper pot still with condenser 
  • 50.2% ABV
  • 400 litres produced
