REAL MINERO | Espadín 2019 | 700ml

Maestro Mezcalero Edgar Ángeles Carreño first roasted the agaves in a conical earthen oven for several days (depending of weather conditions and amount of agave is the cooking time required), than he used an electric grinder to crush the cooked agave before fermentation with well water and natural yeast only, and double distilled in Filipino style clay pot stills. This is a batch of only 205 litres.

This 2019 Espadín is made with 100% Maguey Espadín (Agave Angustifolia). We only have a few bottles left of this small batch production. When the mezcal is rested in glass bottles, it gives a very soft, round profile that elevates all of the flavors and aromas of this recipe. Small batch productions are rare, and we love these collections because one can learn more about how each batch has unique characteristics even though they are made by the same maestro, with the same type of agave plant. What is different? A lot of factors like weather conditions, elevation of the agave field where the plant grew, time of harvesting and process, and of course, the profile that the maestro wants to create according to the plant's content. Here, Edgar offers us a small batch using an electric mill.
